Chocolate Pudding with a Kick
Since I'm a true chocoholic to the core, chocolate pudding is one of my all-time favourite desserts when I'm entertaining guests at home. It's rich, creamy and almost mousse-like and it can be a make-ahead dessert. This is an eggless chocolate pudding, and it's so quick and easy to make with staple pantry ingredients.
The pudding tastes just great by itself, but I flavoured it slightly with powdered cinnamon and cardamom and used some chopped strawberries and crushed Marie biscuits to make a chocolate pudding parfait for a recent get-together with my friends.
For a touch of chic, I used transparent 5 ounce cups to make serve the parfaits as an individual dessert.
The pudding, which is thick, has a rich chocolate flavour, so I topped the parfait with a dollop of whipped cream to cut the rich intensity.

You’ll Need
3 cups whole milk
¼ cup cocoa powder
¼ cup cornstarch
1 ½ cups sugar
½ teaspoon cinnamon powder
½ teaspoon cardamom powder
1 teaspoon pure vanilla essence
a pinch of salt
For the Parfait
½ cup crushed Marie biscuits or graham crackers
1 cup chopped fresh strawberries
1 cup whipped cream
5 oz transparent dessert cups
Directions
1. In small bowl, combine cornstarch, cocoa powder and sugar.
2. Add a few tablespoons of milk to dry mix to obtain a smooth, lump-free paste.
3. Place remaining milk in a saucepan on medium-high heat and add cocoa-cornstarch paste into the milk, again making sure there are no lumps. Add spice powders (cinnamon and cardamom) and keep stirring pudding until it becomes thick and coats the back of a spoon. (Adjust sugar to taste.)
4. Turn off heat and add vanilla essence. Pudding will thicken as it sits. Cover pudding and let cool to room temperature. Once cooled, refrigerate pudding.
5. Before assembling parfait, stir pudding to break any lumps. Add about 2–3 tablespoons of pudding to each 5 oz cup. Top with crushed Marie biscuits, strawberries and a dollop of whipped cream. Serve chilled.
6. If not making a parfait, serve the pudding by itself in ramekins or add some some sliced strawberries on top!
